Comparison of validation results of ISO 7158 and alternative methods for the determination of nitrite and nitrate in processed meat by ion chromatrography

According to European regulation (EC) n°1333/2008, nitrite salts are permitted in meat products and nitrate salts are permitted in non-heat-treated meat products. Since 10 October 2025, the limits of ingoings and residuals nitrate and nitrite salts are specified in Europe as nitrite and nitrate ions. Since the 1990s, various methods based on ion chromatography with conductivity detection were reported [1, 2]. These methods showed good selectivity and reproducibility levels in the determination of nitrite and nitrate ions contents. The objective of this work is to compare the validation results obtained with the recently released Standard ISO 7158 method (method A) and the alternative method without sample purification (method B).
