These \nefforts aim to identify varieties with desirable oenological \nproperties. Polyphenols are one of the most abundant and \nimportant compounds in red wines, since anthocyanins \nare their main pigments and tannins bring astringency \nand mouthfeel. Lots of studies have been conducted on \npolyphenol profile in red wines from interspecific varieties \nbut also in their associated grapes [1]. Recent studies have \ndemonstrated that the polyphenolic characterization isn’t \nthe perfect reflection of the final wine composition [2][3]. \nThey have explained these differences by the difference of \nextraction, the numerous interactions between polyphenols \nbut also with cell-wall polysaccharides [4]. However, the \ndata on polyphenol composition and extraction through \ncell-walls in red interspecific grapes and wines has not\nyet been compared to traditional Vitis vinifera varieties. \nMoreover, their cell-wall composition and their impact on \npolyphenol extraction is not fully understood yet and seems \nto have an significative impact on the wine final quality \nand needs to be elucidated. On this study, the tannins, \nanthocyanins and polysaccharides of 32 red grape varieties \nincluding 14 Vitis vinifera and 18 interspecific hybrids were \nanalysed, as well as in their wines produced by a standard \nmicrovinification process. Significant differences have been \nobserved between varieties in anthocyanin content (p-value \n< 0.05) and polysaccharides composition in both grapes and \nwines (p-value < 0.05 for both wines and berry skins). The \nrepartition of anthocyanins into the different families as well \nas tannin distributions profiles have been characterized in \ngrapes and wines and demonstrate a difference in extraction. \nPlus, PCA demonstrates a positive link between fermentation \nrate and polysaccharide composition and a negative relation \nwith polyphenol content.
